The first known mention of Malaysian tomato rice was in a cookbook published in 1920. It was especially common in the 1970s to 1980s. It is usually served during traditional Malay weddings and engagements, Malay festivals such as Aidil Fitri and Aidil Adha, and also during formal luncheons and dinners. 

Ingredients

   To prepare Malaysian Tomato Rice, you will need:

  •    Rice or Basmati rice
  •    Tomatoes: Ripe and juicy
  •    Spices: An array of aromatic spices like cinnamon, cloves, cardamom, and cumin.
  •    Herbs: Fresh herbs such as cilantro and mint to enhance the flavours.
  •    Onions and garlic
  •    Ghee or cooking oil
  •    Optional ingredients: You can customise your tomato rice by adding vegetables, chicken, or shrimp.

Cooking Process

 Rinse the basmati rice thoroughly and soak it for about 30 minutes. In a large pan, heat ghee or cooking oil and sauté finely chopped onions and minced garlic until golden brown. Add the spices (cinnamon, cloves, cardamom, and cumin) and cook for a minute until fragrant. Stir in diced tomatoes and cook until they soften and release their juices. Drain the soaked rice and add it to the pan, mixing well with the tomato mixture. Pour water into the pan, ensuring a 1:2 rice-to-water ratio. Cover the pan and cook the rice on low heat until it is fluffy and fully cooked. Garnish with fresh cilantro and mint leaves.
