Kuih cucur java or also known as penyaram or penjam is a cake made from rice flour and is well known in the north of Malaysia, Kedah which is popular with various heritage foods based on paddy and rice. Although the name is Cucur Javanese, the origin of this cake has nothing to do with Javanese or Indonesian people. Cucur Java recipe includes rice flour, wheat flour, brown sugar dissolved in hot water. They need to be fermented overnight before being fried in hot oil one by one.

Ingredients
- 2 cups of warm water
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 teaspoon of salt
- 2 cups wheat flour
- 2 cups of rice flour
Cooking Method
- 1. Combine water, granulated sugar, brown sugar and salt. Stir well and filter (sugar water mixture). Let cool first.
- 2. Mix wheat flour and rice flour into the sugar water. Then grind.
- 3. Marinate for 3 hours or overnight. Place in the normal section refrigerator.
- 4. Remove 1/2 hour from the refrigerator before frying.
- 5. Put 2 tablespoons of cooking oil in the pan. Let it heat up.
- 6. Pour the mixture in the middle of the pan. Let it cook from the edge to the center before turning it over.
- 7. Leave it for a while and lift it up, drain the oil over the rice.
- 8. Arrange on oil absorbent tissue. Ready to serve!
