With the passage of time and the influence of science and technology, the tradition of preparing Pulut Kuning in Malay community events is decreasing even though the recipe for making it is simple. However, modernization through education and lifestyle does not completely reject the value of Pulut Kuning as a symbol of gratitude and appreciation in Malay culture. Although the practice of preparing yellow glutinous rice may decrease among the younger generation, it is still relevant in Malay community events until now. So, let’s learn how to make yellow glutinous rice using the recipe below!

Ingredients:

  • 500g glutinous rice
  • 2 pieces of sour cream
  • 1 tablespoon of powdered turmeric / live turmeric 1 -2 cups of thick coconut milk
  • 1 teaspoon of salt

Methods:

Pulut Kuning Step 1

Step 1 : Wash glutinous rice until clean and drain the water. Add water, a little turmeric powder and stir until the color is even. Soak the glutinous rice for 1-2 hours depending on the type of glutinous rice. Old people’s tips say to soak glutinous rice with 2 pieces of asam keping to get shiny glutinous rice.

Step 2 : Heat the steamer, toss the soaked glutinous rice before putting it in the steamer.

Step 3 : Put glutinous rice in a steamer lined with pandan leaves. The use of pandan leaves can give fragrance to the glutinous rice. Steam until steam comes out on the side of the steamer.

Pulut Kuning Step 4

Step 4 : When the steam starts to come out, lift out the glutinous rice and put it in a large bowl. Pour the coconut milk that has been seasoned with salt and sugar. Pour little by little, then stir until smooth and the coconut milk absorbs into the glutinous rice. This process is called Arong in some places it is called arun Pulut.

Step 5 : When finished steaming, steam again until steam rises and cooks. After cooking, you can turn off the stove and put it in a bowl.

Pulut kuning is indeed synonymous with Malay cultural customs. It was even stated in Azhari Ichlas Siregar’s study (2015), “Malays are yellow glutinous rice and vice versa. The correlation between yellow glutinous rice and Malay culture are two things that are interconnected and reinforce each other, where the symbols found on yellow glutinous rice are representative of the life of the Malay community. If it is not a Malay who makes it, it is called ordinary glutinous rice because it is stated that there are certain tips and conditions for cooking yellow glutinous rice”.
