Nasi Telur, just by listening to its name, you must be imagined only rice and eggs. However, the real nasi telur is the kind of rice that is served with fish eggs from crushed fish. The battered fish roe is served as a decoration and served during family gatherings and royal occasions such as grand ceremonies, but not during weddings. This is so, according to Datuk Redzuan Ismail or known as Chef Wan in a television show, this menu comes from the royal kitchen (Darina, 2019).

Ingredients
- Basmati rice 5 pots (serves 10-12 people)
- Salt
- Egg yolk dye
FOR THE EGG LAYER - 10 chicken eggs
- Sweet condensed soy sauce 1 teaspoon
- Salt
FOR THE FLESH LAYER - 1/2 kg soft meat (preferably betel nuts)
- 1 large onion squash finely chopped
- 1 inch cinnamon bark
- 3 cloves
- 1/4 cup cooking oil
- Salt
FOR FRIED ONIONS - 20 small red onion cloves finely sliced
- 3 tablespoons ghee
- 1/2 cup cooking oil
- Salt
- 1 teaspoon of sugar
Cooking Methods
- 1. Fry the eggs till it becomes scrambled and mixed with a small spoonful of sweetened soy sauce and a little salt.
- 2. Cut the meat into small pieces. Boil the meat with water, cinnamon bark, and cloves. When the water dries up, add onions and cooking oil. Add sugar and salt. Fry for a moment.
- 3. Mix ghee and cooking oil to fry shallots. Separate the excess oil when ready to fry the onions.
- 4. To cook rice, 5 pots of rice are cooked using 10 pots of water. Add a pinch of salt. When the rice water is dry, drop the yellow dye. Then let the rice cook.
- 5. In a large pot, layer the still hot rice with meat, fried onions. Then a layer of rice, scrambled eggs, fried onions. Repeat until finished.
- 6. Reheat the rice on low heat. Drizzle the fried onion oil over the rice. Heat the rice in 1/2 hour.
Nasi telur is very suitable for Hari Raya feasts and family gatherings. Can be eaten with cooked red chicken, pickled cucumber, chicken dates or any side dish.
